What is Lacto-Fermentation?

Lacto-fermented foods have been around since the beginning of time. Most ancient societies practiced some form of fermentation; the ancient Chinese brewed fermented teas for health and well being and kimchi is a traditional fermented condiment that is found in every kitchen throughout Korea. It is a time tested form of food preservation and a tradition we are proud to carry on.

Lacto-fermentation is the process in which the use of salt, combined with vegetables, work together to create an environment that promotes the growth and proliferation of the healthy bacterium Lactobacillus. The process differs from pickling in that no vinegar, heat or prepared brines are added.

"Friendly" bacteria such as lactobacillus can help break down food in the digestive tract, absorb nutrients, and fight off "unfriendly" organisms. The lactic acid that is created through this process provides an acidic environment which safely preserves the vegetables and their nutrient content, making lacto-fermented foods rich in vitamins, minerals, and enzymes.

 

    Ways To Enjoy

    Fermented foods are delicious and can be used in a variety of creative ways in the kitchen. They are not sad condiments destined to live in the back of the refrigerator, as many might think them to be. We put our sauerkrauts on everything: fish, scrambled eggs, avocado toast, sandwiches, cheese and crackers, a side dish to meat and poultry, on top of salads, straight out of the jar and of course, as a traditional accompaniment to hotdogs, bratwurst and sausages. Here are just a few ideas:
